Lavender Honey Panna Cotta with Berry Compote

Panna cotta is one of the most elegant desserts you can make, and it requires no baking. This version combines the delicate floral notes of lavender with the sweetness of honey for a sophisticated flavor profile.

Heat heavy cream with fresh lavender buds and honey until steaming, then remove from heat and let steep for 15 minutes. Strain out the lavender, then bloom gelatin in cold water and whisk it into the warm cream until completely dissolved.

Pour the mixture into serving glasses or ramekins and refrigerate for at least 4 hours until set. The panna cotta should be silky and delicate, with just enough structure to hold its shape.

Prepare a berry compote by gently simmering fresh berries with a touch of sugar and lemon juice until they release their juices and break down slightly. Spoon the compote over the chilled panna cotta just before serving. The contrast between the creamy panna cotta and the bright, tart berries is absolutely delicious.
